Crunchy Quinoa & Cabbage Salad
FROM MY RECIPE BOX: This Crunchy Quinoa & Cabbage Salad is easy to throw together and loaded with protein, carbs and healthy fats. I typically use a store bought sauce like this Toasted Sesame Dressing for ease, but feel free to whip up your own like this one!
Crunchy Quinoa & Cabbage Salad
Ingredients:
1 cup dry quinoa, cooked according to package directions
9 oz. shredded cabbage
1 bell pepper, diced
1/2 cup shelled edamame
2 green onions, diced, greens reserved for topping
1/4 cup cilantro, chopped
1/4 cup cashews
sesame seeds, for topping
toasted sesame dressing, like this store-bought one or make your own
Directions:
Allow quinoa to cool before adding all ingredients, except sesame seeds & dressing, to a large bowl.
Toss until well combined. Add desired amount of dressing, mix again, then top with sesame seeds and enjoy!
