Crunchy Quinoa & Cabbage Salad

FROM MY RECIPE BOX: This Crunchy Quinoa & Cabbage Salad is easy to throw together and loaded with protein, carbs and healthy fats. I typically use a store bought sauce like this Toasted Sesame Dressing for ease, but feel free to whip up your own like this one!

Crunchy Quinoa & Cabbage Salad

Crunchy Quinoa & Cabbage Salad

Ingredients:

  • 1 cup dry quinoa, cooked according to package directions

  • 9 oz. shredded cabbage

  • 1 bell pepper, diced

  • 1/2 cup shelled edamame

  • 2 green onions, diced, greens reserved for topping

  • 1/4 cup cilantro, chopped

  • 1/4 cup cashews

  • sesame seeds, for topping

  • toasted sesame dressing, like this store-bought one or make your own

Directions:

  1. Allow quinoa to cool before adding all ingredients, except sesame seeds & dressing, to a large bowl.

  2. Toss until well combined. Add desired amount of dressing, mix again, then top with sesame seeds and enjoy!
