Almond Butter Chocolate Chip Cookies
FROM MY RECIPE BOX: these Almond Butter Chocolate Chip Cookies require just 7 ingredients that you likely already have on hand. Switch the almond butter for peanut butter if you prefer and/or throw in some chopped nuts for a little extra crunch!
Almond Butter Chocolate Chip Cookies
Ingredients:
1 cup almond butter
1 cup almond flour
1/2 cup maple syrup
dash cinnamon

1 egg
1 tsp baking soda
1/2 cup chocolate chips, I like Enjoy Life Mini’s
fancy salt, like maldon, for sprinkling on top
Directions:
IN A MEDIUM SIZE BOWL, MIX TOGETHER THE FIRST 4 INGREDIENTS UNTIL WELL COMBINED. PLACE IN THE FRIDGE FOR 30 MINUTES.
PREHEAT THE OVEN TO 350 DEGREES F AND LINE 2 BAKING SHEETS WITH PARCHMENT PAPER.
AFTER 30 MINUTES, ADD THE EGG, BAKING SODA, CHOCOLATE CHIPS AND MIX UNTIL WELL COMBINED.
USING A SPOON OR COOKIE SCOOP, ROLL DOUGH INTO ~1.5 TBSP SIZE BALLS AND PLACE ON BAKING SHEET, FLATTENING THEm DOWN AND LEAVING ABOUT 2 INCHES BETWEEN. I GOT 20 COOKIES.
SPRINKLE WITH SALT. BAKE FOR 9-11 MINUTES (DEPENDING ON IF YOU WANT GOOEY OR CRISPY!) AND ENJOY!
