Simple Chunky Chili
From me recipe box: this Simple Chunky Chili uses pantry staples, a few fresh veggies and ground beef to make for an easy weeknight meal. Highly recommend pairing this chili with fritos!
Simple Chunky Chili
Ingredients:
1 tbsp olive oil
1/2 onion, diced
3 celery stalks, diced
3 carrots, peeled & diced
1/2 jalapeño, seeded & diced (optional)
3 cloves garlic, minced
1 lbs. ground beef
1 14 oz. can diced fire roasted tomatoes
1 8 oz. can tomato sauce
1 14 oz. can kidney beans, drained & rinsed
2-3 tbsp chili powder, depending on heat preference
2 tsp cumin
2 tsp oregano
1 1/2 tsp salt
pepper to taste
Directions:
1. in a large pot, heat oil on medium heat. add onion, celery, carrot & jalapeno & sauté until the veggies start to soften. about 5 minutes.
2. add garlic and spices and sautee for 1 minute more.
3. add beef and cook, breaking up into small pieces, until browned. About 7 minutes.
4. add remaining ingredients and bring to a boil, reduce to a simmer, then cover for 30 minutes.
5. top with cheese, sour cream, cilantro, Fritos, or whatever your heart desires!
