Chipotle Black Bean Burgers
from my recipe box: chipotle black bean burgers with a secret ingredient…pumpkin (!)…so these black bean burgers aren’t dry at ALL! They are flavorful, protein and fiber packed, and easy to whip up out of pantry staples you likely already have on hand.
Chipotle Black Bean Burgers
Ingredients:
1 15 oz. can black beans, drained and rinsed
1/3 C oat flour (you can also add rolled oats to a blender to get a flour consistency)
1 - 2 tbsp chipotle in adobe (depending on how smokey you want it!)
1/2 C canned pumpkin puree
2 tbsp chopped parsley and/or cilantro
1/4 tsp + an extra pinch of salt
black pepper
1 tbsp ghee, butter or oil, for cooking
Directions:
Preheat oven to 350 degrees F. Place black beans on a baking sheet and let them dry out in the oven for 7-10 minutes).
Once the beans have cooled, add them to a medium size bowl and mash with a fork.
Add remaining ingredients and mix until well combined. Place the “dough” in the fridge for at least 20 minutes.
Remove dough from the fridge and form into 4 patties.
Heat a sauté pan on medium heat and add ghee, coating the pan. Add patties and cook for 4-5 minutes per side until the outside turns slightly brown and crispy. Enjoy!
