Baked Buffalo Chicken Meatballs

FROM MY RECIPE BOX: Buffalo anything and count me in, who’s with me? These baked buffalo chicken meatballs, like my Buffalo Chicken quinoa bake will not disappoint. I promise!

Baked Buffalo Chicken Meatballs

Ingredient:

  • 1 lbs ground chicken

  • 1 egg

  • 1/3 cup almond flour

  • 1 tbsp dried oregano

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 cup buffalo sauce + more for coating

  • 2 tbsp ranch + more for drizzling

  • salt & pepper, to taste

Directions:

  1. Pre heat oven to 400 degrees F and line a small baking sheet with parchement.

  2. Combine all ingredients in a large bowl, being careful not to over mix. Add more almond flour if mixture seems too soft to form into balls (or let mixture sit for 10-15 minutes before rolling into balls).

  3. Form into ~10 meatballs and bake for ~17 mins or until cooked through.

  4. Coat with buffalo sauce and ranch, enjoy!
