Greek Bison Meatballs with Greek Yogurt Tzatziki

From my recipe box: greek inspired bison meatballs with an easy greek yogurt dipping sauce make for a flavorful quick weeknight meal or a dish to add to your meal prep repertoire!

GREEK BISON MEATBALLS with Greek Yogurt Tzatziki

INGREDIENTS:

Meatballs

  • 1 lbs ground bison

  • 1 egg

  • 1/4 cup milk of choice

  • 1/3 cup crumbled feta

  • 2 tbsp plain hummus

  • 1/2 zucchini, grated & Squeezed dry

  • 2/3 cup breadcrumbs

  • 2 tbsp fresh thyme, chopped

  • 1 tbsp fresh mint, chopped

  • salt & pepper, to taste

Tzatziki Sauce

  • 1 heaping cup greek yogurt

  • 2 tbsp fresh dill, chopped

  • 1 tbsp fresh mint, chopped

  • 1 small persian cucumber, finely diced

  • 1/2 lemon, juice & zest

  • salt & pepper, to taste

DIRECTIONS:

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment or grease well.

  2. Add all meatball ingredients in a medium size bowl until well combined.

  3. Form into balls [I made mine into ~3 tbsp balls to form 9 total meatballs] and bake at 400 for 20-25 minutes or until cooked through.

  4. Tzatziki: Combine all ingredients in a small bowl and serve with meatballs or any other dish you like!
