Greek Bison Meatballs with Greek Yogurt Tzatziki
From my recipe box: greek inspired bison meatballs with an easy greek yogurt dipping sauce make for a flavorful quick weeknight meal or a dish to add to your meal prep repertoire!
GREEK BISON MEATBALLS with Greek Yogurt Tzatziki
INGREDIENTS:
Meatballs
1 lbs ground bison
1 egg
1/4 cup milk of choice
1/3 cup crumbled feta
2 tbsp plain hummus
1/2 zucchini, grated & Squeezed dry
2/3 cup breadcrumbs
2 tbsp fresh thyme, chopped
1 tbsp fresh mint, chopped
salt & pepper, to taste
Tzatziki Sauce
1 heaping cup greek yogurt
2 tbsp fresh dill, chopped
1 tbsp fresh mint, chopped
1 small persian cucumber, finely diced
1/2 lemon, juice & zest
salt & pepper, to taste
DIRECTIONS:
Preheat oven to 400 degrees F. Line a baking sheet with parchment or grease well.
Add all meatball ingredients in a medium size bowl until well combined.
Form into balls [I made mine into ~3 tbsp balls to form 9 total meatballs] and bake at 400 for 20-25 minutes or until cooked through.
Tzatziki: Combine all ingredients in a small bowl and serve with meatballs or any other dish you like!
