Egg Muffins with Sausage, Spinach & Goat Cheese
Ingredients:
1 tbsp olive oil
1 lbs ground sausage, I use Italian pork or chicken
6 oz spinach
2.5 oz goat cheese (half of a small log), crumbled
9 eggs
salt & pepper, to taste
Directions:
Preheat oven to 400 degrees F and grease a 12 cup muffin tin (I like using a silicone for ease).
In a pan over medium heat, add olive oil and sausage. Brown, breaking up into small pieces until almost fully cooked.
Add spinach to the pan and stir until wilted and sausage is cooked through. Let cool, then stir in most of the crumbled goat cheese, reserving some to sprinkle on top.
In a bowl, whisk eggs and season with salt and pepper.
Add sausage and spinach mixture to prepared muffin tin. Pour whisked eggs evenly over top. Sprinkle each with remaining goat cheese.
Bake for 22-25 minute or until eggs are set.
