Buffalo Turkey Stuffed Sweet Potatoes
from my recipe box: for my buffalo lovers — a slight twist on your typical buffalo chicken dish…these Buffalo Turkey Stuffed Sweet Potatoes have been a hit around here, and I think you’ll love ‘em because they require just 6 ingredients and less than 15 minutes of active cooking time!
Ingredients:
4 small/medium sweet potatoes, rinsed/scrubbed
1 tbsp olive oil
1 lbs ground turkey
1/2-3/4 cup buffalo sauce, I like The New Primal*
1 tbsp mayonnaise, I like Primal Kitchen**
salt & pepper, to taste
1/4 cup bleu cheese dressing, sub ranch if you prefer
green onions, chopped (optional for garnish)
Directions:
Preheat oven to 450 degrees F. line a baking sheet with foil and lightly grease. Poke sweet potatoes all over with a fork and roast for 35-50 minutes, depending on size, until they can be easily pierced with a fork.
While sweet potatoes are roasting, add oil to a sauté pan on medium high heat. One hot, add turkey and brown until no pink remains. Remove from heat and stir in buffalo sauce until turkey is well coated. Add mayonnaise and stir until combined. Add salt and pepper as desired.
Remove sweet potatoes from the oven, cut them down the center (not all the way through!), and let cool until you are able to handle them easily.
Gently open up the sweet potatoes from the cut that you made and Stuff sweet potatoes with the turkey mixture (there will likely be extra filling that you can let overflow on the plate!). Drizzle with dressing and top with green onions.
