Fudgy Black Bean Brownies

INGREDIENTS

  • 1/2 cup rolled oats

  • 15 oz. can black beans, rinsed & drained

  • 4 tbsp. cacao powder, sub cocoa powder

  • 3/4 cup coconut sugar

  • 2 tbsp. avocado oil

  • 2 tbsp. unsweetened apple sauce

  • 1/2 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1/4 tsp. salt

  • 1/3 cup dark chocolate chips, plus more for sprinkling on top

  • fancy salt, like maldon for sprinkling on top

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and lightly grease an 8X8 pan.

  2. add oats to the bowl of a food processor and pulse until a flour-like consistency forms.

  3. Add remming ingredients, except the chocolate chips, and process for at least a minute until a smooth texture is reached. Stir in the chocolate chips.

  4. Pour batter into the prepared pan, sprinkle with salt, and bake for ~20-22 minutes. Let cool completely before cutting.
