Buffalo Chicken Meatloaf
Ingredients:
1 lbs ground chicken
16 ritz crackers, crushed well (could try subbing 3/4 cup breadcrumbs)
1 egg
4 tbsp buffalo sauce, divided + more for serving, I like The New Primal
2 tbsp chopped fresh dill
1/2 tsp garlic powder
1/2 tsp salt
pepper, to taste
optional to garnish: ranch, green onion, blue cheese
Directions:
Preheat oven to 375 degrees F and line a small baking sheet with parchment paper.
In a bowl, combine crushed ritz crackers with egg, 2 tbsp buffalo sauce, dill, garlic powder, salt and pepper and mix well. Add ground chicken, and using your hands, gently mix until well incorporated.
Form into a meatloaf shape on the prepared baking sheet. Brush with 2 tbsp buffalo sauce.
Bake for 40 minutes or until cooked through. Top with an additional 1 tbsp (or more!) buffalo sauce and any optional toppings. Slice and enjoy!
