Buffalo Chicken Meatloaf

Ingredients:

  • 1 lbs ground chicken

  • 16 ritz crackers, crushed well (could try subbing 3/4 cup breadcrumbs)

  • 1 egg 

  • 4 tbsp buffalo sauce, divided + more for serving, I like The New Primal

  • 2 tbsp chopped fresh dill 

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • pepper, to taste 

  • optional to garnish: ranch, green onion, blue cheese

Directions:

  1. Preheat oven to 375 degrees F and line a small baking sheet with parchment paper.

  2. In a bowl, combine crushed ritz crackers with egg, 2 tbsp buffalo sauce, dill, garlic powder, salt and pepper and mix well. Add ground chicken, and using your hands, gently mix until well incorporated.

  3. Form into a meatloaf shape on the prepared baking sheet. Brush with 2 tbsp buffalo sauce.

  4. Bake for 40 minutes or until cooked through. Top with an additional 1 tbsp (or more!) buffalo sauce and any optional toppings. Slice and enjoy!
