Egg Muffins with Spinach, Sausage & Manchego
Ingredients:
1/2 tbsp olive oil
14 oz ground chicken sausage
3 cups spinach
10 eggs
1/2 cup Manchego, grated
salt & pepper, to taste
Directions:
Preheat oven to 400 degrees F and grease a muffin tin or a silicone muffin tin (I like silicone, easier to clean!).
In a sauté pan, add olive oil and brown chicken sausage over medium heat, breaking up into small pieces, until no pink remains.
Stir in spinach and sauté until wilted.
Divide mixture evenly among the prepared muffin tin.
In a bowl, whisk eggs, salt and pepper. Pour evenly over sausage/spinach mixture.
Top each muffin tin with manchego and stir gently with a spoon.
Bake for 22-25 minutes or until eggs are set.
