Turkey Taco Pasta
DIRECTIONS:
1 tbsp olive oil
1/2 onion, diced
1 red bell pepper, diced
1 lbs ground turkey
1 taco seasoning packet, about 3 1/2 tbsp, I like Siete Foods Spicy Taco Seasoning*
2 1/2 cups chicken broth
1 cup enchilada sauce, I like Siete Foods* or 365 by Whole Foods
1/2 cup shredded mexican cheese or Siete Foods Cashew Nacho Cheese* + more for serving
8 oz Banza chickpea pasta elbows (if you use regular pasta you’ll need to add more broth/enchilada sauce!)
salt & pepper, to taste
optional: black beans, corn, cilantro, lime, avocado, and/or crumbled tortilla chips to garnish
DIRECTIONS:
In a dutch oven or large pot, heat olive oil over medium heat. Add onion and bell pepper and sauté until onion is translucent and pepper starts to soften.
Add ground turkey. As it browns, continue to break up until smaller pieces until no pink remains.
Add taco seasoning and continue cooking for 30 seconds. Add chicken broth, enchilada sauce and pasta. Bring to a boil and cook pasta as long as package directions indicate.
Turn off the heat. Stir in cheese or cashew cheese and adjust seasoning as needed. If it’s too thick, add more enchilada sauce or chicken broth. Serve with any optional toppings.
