Cheesy Chicken Chorizo Breakfast Tacos
From my recipe box: A breakfast fiesta to start your day or break the “rules” and make these Cheesy Chicken Chorizo Breakfast Tacos for lunch or dinner!
Cheesy Chicken Chorizo Breakfast Tacos
Ingredients:
1/2 tbsp olive oil
1 lbs ground chicken chorizo
6 eggs, whisked
1/4 - 1/2 cup Mexican cheese
salt & pepper, to taste
6-8 small corn/flour tortillas
optional toppings: cilantro, more cheese, avocado, salsa
Directions:
In a large sauté pan, heat olive oil on medium high heat. Add chorizo (casings removed) and cook, breaking up into small pieces, until browned.
Turn heat down and add the eggs, stirring frequently to prevent sticking and to get them nice and scrambled! Stir in cheese, salt and pepper.
Divide chorizo filling evenly among tortillas and add toppings as desired.
