Pumpkin Almond Butter Chocolate Chip Muffins

INGREDIENTS:

  • 3/4 cup pumpkin puree 

  • 3/4 cup almond butter

  • 1/2 cup maple syrup

  • 1 egg

  • 1 tsp vanilla

  • 1 cup almond flour

  • 2 tbsp pumpkin pie spice

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/3 cup chocolate chips, plus more for topping

DIRECTIONS:

  1. Preheat oven to 350 degrees F and grease a 12 cup muffin pan.

  2. In a large bowl, combine all ingredients, except chocolate chips, and stir until smooth.

  3. Fold in chocolate chips.

  4. Distribute batter evenly into prepared muffin pan and top each with a few additional chocolate chips.

  5. Bake for 25 minutes or until a toothpick inserted in the center comes out mostly clean.
