Pumpkin Almond Butter Chocolate Chip Muffins
INGREDIENTS:
3/4 cup pumpkin puree
3/4 cup almond butter
1/2 cup maple syrup
1 egg
1 tsp vanilla
1 cup almond flour
2 tbsp pumpkin pie spice
1/2 tsp baking soda
1/4 tsp salt
1/3 cup chocolate chips, plus more for topping
DIRECTIONS:
Preheat oven to 350 degrees F and grease a 12 cup muffin pan.
In a large bowl, combine all ingredients, except chocolate chips, and stir until smooth.
Fold in chocolate chips.
Distribute batter evenly into prepared muffin pan and top each with a few additional chocolate chips.
Bake for 25 minutes or until a toothpick inserted in the center comes out mostly clean.
