Spinach & Chicken Sausage Breakfast Burritos

Ingredients:

  • 1 tbsp olive oil

  • 14 OZ. GROUND BREAKFAST SAUSAGE (CHICKEN, Turkey OR PORK)

  • 8 eggs, whisked

  • 2 large handfuls of spinach

  • 1/2 - 1 cup shredded cheese (i’ve used cheddar, mexican & manchego, all are delish!)

  • salt, to taste

  • 6 large tortillas (whatever your preference is)

  • optional toppings: salsa, avocado, sour cream, cilantro

Directions:

  1. In a large sautee pan, heat olive oil over medium high heat.

  2. Add chicken sausage, breaking up into smaller pieces, until cooked through.

  3. Add spinach and stir until wilted.

  4. Add eggs, reduce heat to low, and stir frequently until eggs are nearly cooked through. Add cheese and continue stirring until eggs are fully cooked.

  5. Place tortillas on a flat surface and add ~1/3 cup of filling to one side of the tortilla. Fold tortilla over, tucking in the ends, as you continue to roll. Repeat with remaining tortillas. Enjoy with optional toppings like salsa, avocado or sour cream.
