Flourless Chocolate Almond Coconut Muffins
Ingredients:
wet ingredients:
1 cup almond butter
1/2 cup maple syrup
1/4 cup melted coconut oil
2 eggs
1 tsp vanilla extract
1/2 tsp almond extract
dry ingredients:
1/2 cup cacao/cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup dark chocolate chips, plus more for topping
1/3 cup finely shredded coconut, plus more for topping
1/4 cup chopped almonds, plus more for topping
Directions:
preheat oven to 350 degrees F and lightly grease a 12 cup muffin tin.
in a large bowl, combine wet ingredients until smooth.
Stir in cacao powder, baking soda and salt. Fold in chocolate chips, coconut and almonds, and mix until smooth.
Divide among prepared muffin tin and top each muffin with a sprinkle of chocolate chips, shredded coconut and chopped almonds.
bake for 15-17 minutes or until a toothpick comes out clean.
