Super Seedy No-Bake Almond Butter Bars

SUPER SEEDy NO-BAKE ALMOND BUTTER BARS

INGREDIENTS*:

  • 1 heaping cup medjool dates [~10 pitted dates]

  • 1 1/2 cups rolled oats

  • 1/2 cup pecans

  • 3/4 cup pumpkin seeds

  • 2 tbsp chia seeds

  • pinch of salt

  • 1/3 cup maple syrup

  • 1/4 cup almond butter

  • 2 tbsp mini chocolate chips [I like enjoy life]

DIRECTIONS:

  1. Pulse dates for several seconds until they’re chopped into smaller pieces.

  2. Add the rest of the ingredients through salt. Blend until a finer “flour” forms.

  3. Add maple syrup and almond butter. Blend again until a slightly sticky dough forms. Add chocolate chips if desired and pulse again.

  4. Line an 8X8 dish with parchment and press dough into pan until even.

  5. Freeze for at least 2 hours before cutting into 1” bars.

*replace nuts/seeds with whatever you have on hand!
