Super Seedy No-Bake Almond Butter Bars

SUPER SEEDy NO-BAKE ALMOND BUTTER BARS
INGREDIENTS*:
1 heaping cup medjool dates [~10 pitted dates]
1 1/2 cups rolled oats
1/2 cup pecans
3/4 cup pumpkin seeds
2 tbsp chia seeds
pinch of salt
1/3 cup maple syrup
1/4 cup almond butter
2 tbsp mini chocolate chips [I like enjoy life]
DIRECTIONS:
Pulse dates for several seconds until they’re chopped into smaller pieces.
Add the rest of the ingredients through salt. Blend until a finer “flour” forms.
Add maple syrup and almond butter. Blend again until a slightly sticky dough forms. Add chocolate chips if desired and pulse again.
Line an 8X8 dish with parchment and press dough into pan until even.
Freeze for at least 2 hours before cutting into 1” bars.
*replace nuts/seeds with whatever you have on hand!
