Smokey Kimchi Dip
From My Recipe Box: This smokey Kimchi Dip will light up those tastebuds while also offering a probiotic (i.e. gut health) benefit from the fermented cabbage, kimchi!
SMOKEY KIMCHI DIP
Ingredients
1 cup kimchi [I like wildbrine korean]
1/2 cup raw cashews [see directions for soaking]
1 tbsp cashew butter
1-2 tbsp almond milk, depending on desired thickness
1/4 tsp smoked paprika
salt & pepper, to taste
Directions
Soak cashews for at least 4 hours or flash boil for 5 minutes and drain.
Add all ingredients to a mini food processor or blender, starting with 1 tbsp almond milk and adding more as desired.
Enjoy as a dip with crackers/raw veggies or as a sauce for roasted veggies/salads!
