Pumpkin Protein Chocolate Chip Muffins
Ingredients*:
1 cup almond butter
1/2 cup pumpkin puree
1/4 maple syrup
2 eggs
2 scoops pumpkin protein powder (I use Ancient Nutrition)**
1/2 tsp baking soda
1/4 tsp salt
1/4-1/3 cup dark chocolate chips (I like Enjoy Life)
Directions:
Preheat oven to 350 and grease a 12 cup muffin tin.
Combine wet ingredients in a medium bowl.
Add dry ingredients, except chocolate chips, and mix until just combined. Fold in chocolate chips.
Pour batter evenly among prepared muffin tin, and bake for 20 minutes or until a toothpick comes out clean.
**if you don’t have this flavor of protein, try adding the same amount of vanilla or chocolate protein powder plus 3/4-1 tbsp pumpkin pie spice
